This one is a little more work o we make this at home and take with us
Get four large red pepper and four too six cloves of garlic, bit of olive oil over them and a good helping of (dried) oregano, put in the oven for half an hour until the peppers start to blister. Take them out and let them cool (stick them in a bag in the fridge)
Chop up an onion and gently start to fry off in a large pan, while the onion is softening peel six large tomatoes, take out the seeds and put into the pan. Take the skin off the peppers, take out the seeds roughly chop and pop into the pan. Squeeze the garlic pulp into the pan and add about a litre of veg stock, you can add a tablespoon of sugar if you like this quite sweet, up to you. Nearly forgot, couple of fresh basil leaves as well.
Simmer for 30 mins or so and zap it with the blender.
Only needs some bread for a cracking quick lunch
